cast iron skillet cooking {roasted rosemary red potatoes}

The last time I got a post done in time to participate in the blog circle with The Inspired Plate was August when I managed a visit to the SoCo Farmer’s Market.  And I have missed being a part of this group, so this month I searched online and in stores for a cast iron skillet so I could participate in the challenge. 

My first one. 
Ever. 
I don’t know if I have really even ever picked one up (man those things are heavy). 

Being the analytically over thinking person that I am, I researched all about cooking with cast iron.  And all this reading got me really excited.  I now have a super long list of things I want to cook in this skillet from cornbread to cinnamon rolls.  I simply cannot wait to cook more good food in this thing. 2013Dec23_0054-WEB

But, back to the recipe here today.  I wanted to go simple & fresh.  It is the crazy holiday season after all & I wanted this to be fun not just one more thing on my list. 

 

[yumprint-recipe id=’3′] You will want to try cooking in a cast iron skillet (if you were like me & hadn’t ever done this before).  And, I promise you will also be wanting to make cornbread & cinnamon rolls in that said skillet next too.  I think I could have just sat down & eaten this whole skillet of potatoes they were so tasty.  But, I promise I shared them.
